Apple Fritters (Oil-Free, Low-Fat, Plant-Based, GF & Vegan too!)

I used to make apple fritters by coating apple slices in a mixture of white flour, white sugar, and a scrambled egg, and fry the coated apple slices in canola oil.

Apple Fritters taste like apple pie filling right out of the oven. Unfortunately, the only healthy ingredient is the apple.

This vegan, plant-based, apple fritter recreation tastes even better than the original recipe, and it’s healthy, cholesterol-free, oil-free, and gluten-free.

These baked apple fritters are crispy on the outside and soft on the inside, just like I like them. Baking takes a little longer than frying, but it’s worth the wait.

Ingredients:

  • 1 certified organic, thinly sliced apple of your choice, skin on
  • 2 T whole flax seeds
  • ½ cup + 2 T old fashioned oats
  • 1 tsp ground cinnamon
  • 1 ripe banana, broken into 1-inch pieces
  • 1 T apple cider vinegar
  • 2 T water or plant milk
  • 1 teaspoon vanilla extract, optional
  • balsamic vinegar or maple syrup, to drizzle on top

Preheat oven to 350 degrees. Grind the flax seeds in a coffee grinder into a flour. Add the ground flaxseed, oats and cinnamon to a large food processor and mix into a flour. Pour out the flour into a medium-sized bowl and set aside.

Add the banana, apple cider vinegar, water or plant milk and vanilla extract to the food processor and blend into a liquid.

Add the flour to the wet blended ingredients and blend again to make the batter.

Pour batter into the medium-sized bowl you set aside, scraping out any leftover batter in the food processor with a spoon.

Dip the apple slices, one at a time, into the thick batter, fully submerging each one with a lot of the batter (there might even be some left over). Place the coated apple slices onto a parchment paper-lined baking sheet, leaving space between each one.

Bake 20 minutes in a preheated oven.

When done baking, place apple fritters onto a large plate and drizzle with balsamic vinegar, or if you like it very sweet, drizzle with 1 to 2 teaspoons of pure maple syrup. Serve warm.

For a thinner batter, use two apples and the recipe will serve two people ,or make a large breakfast, or treat, for one.

Nutritional information below is for original recipe with one apple and 2 teaspoons of balsamic vinegar.
