The Thermomix makes preparing a homemade Quiche Lorraine so incredibly easy! From making the pastry to sauteing the bacon and onion, grating the cheese to mixing the filling… it really does do everything for you!

This classic egg and bacon quiche with a creamy, cheesy filling is a restaurant quality meal – but homemade!

I highly recommend making your own shortcrust pastry (it’s SO easy in the Thermomix and requires just 3 ingredients!) as it gives you the ultimate buttery, melt-in-your-mouth pastry.

However, if you’re short on time, you can use frozen shortcrust pastry or a store-bought pastry shell instead.

Serve your Thermomix quiche lorraine with a light salad – my rocket, pear, walnut and parmesan salad is a great option… or try my roast pumpkin, baby spinach and feta salad!

What You Need

My Thermomix Quiche Lorraine may look fancy, but it’s made using basic ingredients.

For The Homemade Shortcrust Pastry (Optional)

  • Flour – you can use regular plain (all purpose) flour or Bakers flour.
  • Butter – I like to use salted butter in my shortcrust pastry.
  • Water – chilled.

For The Filling

The ingredients for an egg and bacon quiche.
  • Cheese – use a tasty or cheddar cheese.
  • Onion – use ½ a brown onion.
  • Bacon – use shortcut or streaky bacon.
  • Olive oil.
  • Eggs – use large eggs (approximately 60g each).
  • Cream – choose a full fat cooking cream or thickened cream for this recipe.
  • Salt & pepper – to taste.

Step By Step Instructions

You won’t believe how easy it is to make your own homemade Thermomix Quiche Lorraine!

Step 1 – Make The Shortcrust Pastry (Optional)

Place the flour and butter into the Thermomix bowl and mix until it resembles fine breadcrumbs.

Add the iced water and knead for 1 minute.

Form the dough into a ball, wrap in plastic wrap and chill in the fridge for 30 minutes.

Blind bake the pastry if you’re using your own homemade shortcrust, or defrosted shortcrust pastry sheets.

Step 2 – Prepare The Filling

Place the cheese into the Thermomix and mix until finely grated. Set aside.

Chop the roughly cut bacon and the half onion in the Thermomix.

Add the olive oil and saute until softened.

Place the eggs, cream, reserved grated cheese, salt and pepper to the bowl.

Mix together on REVERSE until combined.

TIP: We use the REVERSE function here as we want the blades to mix rather than chop.

Step 3 – Bake

Pour the mixture into the prepared pastry shell and bake for 35 minutes or until golden on top and the filling is cooked through.

If I’m running short on time, can I use frozen shortcrust pastry or a store-bought pastry shell?

Absolutely! My preference is always to make my own pastry if I have time, but store-bought pastry works wonderfully in this recipe too.

Ingredients

For the quiche crust (choose 1 option)

Instructions

  • If using homemade shortcrust pastry then prepare as per this recipe and then blind bake. If using defrosted shortcrust pastry sheets, blind-bake according to this recipe.
  • Preheat oven to 180 degrees celsius fan-forced (or 200 degrees celsius conventional).

  • To prepare the quiche filling, place the cheese into the Thermomix bowl. Mix for 10 seconds, Speed 9. Set aside.

  • Place the onion half and the roughly chopped bacon into the Thermomix bowl. Chop for 5 seconds, Speed 4 (or longer if you’d like it more finely chopped). Scrape down the sides of the bowl.

  • Add the olive oil and saute for 5 minutes, 70 degrees, REVERSE, Speed 1.

  • Add the eggs, cream, reserved grated cheese, salt and pepper to the bowl and mix for 15 seconds, REVERSE, Speed 2, or until combined.

  • Pour the mixture into the store-bought pastry shell or blind-baked pastry shell and bake for 35 minutes or until golden and cooked through.
