This particular low carb salmon recipe comes straight out of my Feast Fall Cycle 1 Meal Plan for the 17 Day Diet (it’s the plan we’ll be using for our weight loss challenge and it’s only available during the fall season).

I tweaked this recipe just a bit from the original (I’m always finding ways to make my recipes better the more I make them!!) and I think you’ll want to give this one a shot this week!

If you’ve never had capers, you’re in for a treat!

They are a little briny with a hint of a lemony flavor and they bring such a freshness to any dish!

I use capers all the time in my cooking – there’s always a small jar of them in my refrigerator and I love incorporating them into my fish and chicken dinners.

Ingredients for Low Carb Salmon Recipe

Like most of my recipes, this low carb Salmon dish is easy to make. It only includes a few key ingredients, which include:

  • Salmon Filets
  • Olive Oil
  • Lemon
  • Capers
  • Fresh parsley leaves
  • Garlic

The ingredient for this salmon dish are fairly simple with salmon, lemon, capers and parsley

Substitutions for Salmon

If you’re not a huge fan of salmon, this recipe is super versatile! You can easily use your favorite protein in its place. Here are a few ideas:

  • Mahi Mahi
  • Tilapia
  • Cod
  • Halibut
  • Shrimp
  • Chicken breast

Substitutions for Capers

If you’ve tried capers and you’re not a fan (bummer!), try these ingredients instead:

  • Green Olives
  • Kalamata Olives
  • Feta Cheese
  • Pickles
  • Artichoke Hearts

The original recipe calls for serving with roasted cauliflower, but you can easily use your favorite vegetable!

Low Carb Salmon with Lemon Caper Vinaigrette

Ingredients

  • 4 Salmon Filets
  • Salt and Pepper
  • Olive Oil for frying

For Vinaigrette:

  • Juice of 1 lemon
  • 1 Tablespoon Capers
  • ½ cup fresh parsley leaves
  • 1 garlic clove, minced
  • 4 Tablespoons Olive Oil

Remaining Ingredients:

  • ½ Lemon, cut into thin slices or wedges
  • 2 teaspoons Capers for topping
  • Parsley for garnish

Instructions

    1. Prepare vinaigrette by pulsing lemon juice, capers, parsley, garlic and olive oil in a food processor. Season with salt and pepper. Set aside.
    2. Heat a drizzle of olive oil in a large pan over medium heat.
    3. Season salmon filets with salt and pepper and cook for 4 minutes on each side.
    4. Serve salmon topped with vinagrette and garnish with extra capers and parsley along with a slice or wedge of lemon.
